Storage:
Leeks should be stored unwashed in the refrigerator, preferably wrapped in paper or in a perforated plastic bag to retain moisture. They keep well for about 1 week. Once cut, they should be kept in an airtight container and consumed within a few days. To freeze, slice and blanch them briefly before storing.
