Uses and Properties: In India, lemongrass is traditionally used in infusions, either alone or combined with other plants, for its digestive, healing, relaxing, analgesic, antidepressant, and antiseptic properties, and it helps prevent intestinal gas. It has a lemon-like flavor and aroma, slightly bittersweet, and is very popular in Thai and Vietnamese cuisine. The tender bulbs and peeled stems are most commonly used, either to flavor broths or ground to extract aromatic oils. Combined with ginger, garlic, chilies, or coriander, it adds exotic citrus notes that pair perfectly with fish, shellfish, or chicken.
Storage: Fresh lemongrass can be kept in the refrigerator for a few days. It can also be used dried or pulverized.
