Eggplant

Aubergine is a vegetable with a striking appearance, thanks to its bright violet, glossy skin and numerous varieties. Its shape is usually cylindrical, oval, or elongated, measuring 10–30 cm. The white pulp contains small edible seeds and is topped with a green calyx from which the stem emerges. Thanks to greenhouse cultivation, aubergines are available year-round.
