Endive

Endive is a cylindrical vegetable formed by overlapping lanceolate leaves, creating a whitish bud due to lightless cultivation techniques. Leaves typically measure 9–17 cm in length and 3–6 cm in diameter. A notable variety is red endive, resulting from the crossing of common chicory with red chicory. It is available practically year-round.
